Healthy Spiced Apple Muffins – Wheat, Dairy & Sugar Free

Spiced Apple Muffins Featuring Cinnamon and Ginger These spiced apple muffins remind me of apple and cinnamon porridge, and they are healthy enough to be eaten for breakfast. They are free of wheat, dairy and refined sugar. Ingredients: 1 cup coconut flour ½ cup rolled oats (I used wheat free) ½ cup desiccated coconut ½ cup roughly chopped walnuts 6 pitted, chopped, fresh dates (depending on your sweetness preference) 2 teaspoons Cinnamon powder 2 teaspoons Ginger powder 1 teaspoon vanilla (I used powder but liquid extract or paste can be used too) Pinch of Celtic or Himalayan salt 2 cups almond (or coconut) milk (this sounds like a lot but coconut flour absorbs heaps of liquid) – I used Carew Kitchen fresh almond milk in a glass bottle because it does not have additives, unlike the stuff...

Resistant Starch – The new Fibre?

Resistant Starch… the new Fibre? Most of us have heard of soluble and insoluble fibre. but what about resistant starch?  It’s the third type of fibre.  The definition is “the sum of starch and products of starch degradation not absorbed in the small intestine of healthy individuals”. Benefits: Essential for diabetics because it improves insulin sensitivity and lowers blood glucose levels.  Additionally, it has a ‘second-meal effect’ so it lowers the insulin spike at the next meal too. Helpful for weight loss because it reduces appetite.  Resistant starch is a food for our gut bacteria.  When beneficial bacteria eat fibre they produce butyrate which is a short-term fatty acid that promotes fat burning. Study Nutrition  - Why study at Wellpark College, Auckland, New Zealand? You may be wondering what the difference is between studying Nutrition at Wellpark College compared to studying Nutrition or Dietetics through a university.  Wellpark teaches ‘holistic’ Nutrition, whereas universities teach ‘conventional/mainstream’ Nutrition. When I hear the words ‘conventional’ and ‘mainstream’ I imagine the Heart Foundation’s food pyramid, which they have now changed to the “Heart Healthy Visual Food Guide”.  Their new version has some slight improvements, like separating grains from vegetables and fruit by moving them up to the next level labelling them “eat some” instead of “eat most”.  However, from studying at Wellpark I know that it is still flawed.  From what I have learnt at Wellpark, I know that eating this way does not...

Well, to begin with I had to Google “Junk Free June” as I had only heard about it through my girlfriend who is going to do it and trying to get me to join her. Basically it’s a not for profit organization run by the Cancer Society that encourages people to eat healthier by cutting out junk food throughout the month of June while raising money for the Cancer Society. Even though I am not attempting it, it did get me thinking, what is junk food to me?
